
This is a perfect dish when you want to clear off your fridge before going for the next grocery run, because you can add in anything you like!

Ingredients:
- Onion
- Carrot
- Tomato
- Green Pepper (optional)
- Eryngii (or any Mushrooms)
- Garlic
- Bacon
In a frying pan:
- sauté the garlic with a few pieces of bacon
- pan-fry on medium heat until they turn crispy and brown
- add in all the chopped vegetables except tomatoes
- add seasonings with below sequence: salt, brown sugar, black pepper, stir for 10-15 seconds in between each
- add 2 tbsp of tomato purée, 1/2 tbsp of dark soya sauce, 1 tbsp of sweet soya sauce
- add a cup of water and let it simmer on medium heat with lid open until sauce is thickened
- add in fresh tomatoes, stir well for 2mins and off the heat
- lay out cooked rice in a baking tray or a baking bowl, spread all the sauce on top
- layer the bacon pieces on top, add any types of cheese preferred
- bake in the oven under 220 degrees for 10mins
- serve with a side of kimchi & Sriracha
