Asian style bacon & cheese baked rice

This is a perfect dish when you want to clear off your fridge before going for the next grocery run, because you can add in anything you like!

Ingredients:

  • Onion
  • Carrot
  • Tomato
  • Green Pepper (optional)
  • Eryngii (or any Mushrooms)
  • Garlic
  • Bacon

In a frying pan:

  • sauté the garlic with a few pieces of bacon
  • pan-fry on medium heat until they turn crispy and brown
  • add in all the chopped vegetables except tomatoes
  • add seasonings with below sequence: salt, brown sugar, black pepper, stir for 10-15 seconds in between each
  • add 2 tbsp of tomato purée, 1/2 tbsp of dark soya sauce, 1 tbsp of sweet soya sauce
  • add a cup of water and let it simmer on medium heat with lid open until sauce is thickened
  • add in fresh tomatoes, stir well for 2mins and off the heat
  • lay out cooked rice in a baking tray or a baking bowl, spread all the sauce on top
  • layer the bacon pieces on top, add any types of cheese preferred
  • bake in the oven under 220 degrees for 10mins
  • serve with a side of kimchi & Sriracha
